How to make a watermelon mojito

In my last cocktail post I promised I would share with you my quick and easy cocktail recipe for a refreshing watermelon mojito.

It's funny that I've created a recipe for this as I'm not actually a huge watermelon fan, but having tried a similar version in a local bar recently, I loved it - and thought I have to make one at home.

The recipe below will make you two cocktails - so you'll need to double up if you're looking to impress a bigger group of friends.

What you'll need
  • Cocktail glass
  • Ice
  • Blender (or nutribullet)
  • 1/4 of a fresh watermelon
  • Cucumber
  • Fresh mint 
  • White rum (4 shots) 

  1. First take a large handful of ice and place it into your blender or nutribullet.
  2. Cut your watermelon into small chunks and add to the ice. 
  3. Add four shots of the white rum.
  4. Add half of handful of fresh mint.
  5. Give the concoction a good stir.
  6. Turn on your blender or nutribullet and blast for 2 minutes.
  7. Check to make sure the consistency is smooth but thick. If it's still a bit lumpy - blast for a further 30 seconds.
  8. Meanwhile, take a slice of cucumber and make a small incision to the side of it.
  9. Pour the drink into your favourite cocktail glass.
  10. Take your sliced cucumber and insert onto the side of the glass to garnish.
  11. Take a spirnkle of mint to garnish further.
  12. Enjoy!
