Make Pret a Manger's Pesto Chicken Salad at Home

Pret's chicken, pesto and mozarella salad is delicious and is one of my favourite on-the-go healthy lunchtime meals. But like all freshly prepared food, it's rather expensive for what you get.

Last summer I fancied something really light but something warm for dinner, and decided to make my own version of this salad. It's nutty and sweet and now one of my favourite quick and healthy dinners to make when I fancy something that feels really indulgent - but really isn't when it comes to the calories.

I've found that the below amount of ingredients actually makes two salads, handy for when you have visitors or to take to work the next day.

  • Bag of spinach
  • Fresh buffalo mozzarella 
  • 3 small chicken breasts / (2 large)
  • 1 tbsp olive oil 
  • 3-4 tbsp of green pesto
  • Cherry tomatoes 
  • 150 ml light creme fraiche 
  • Black pepper 
  • Balsamic vinegar

  1. Take a non-stick pan and place on a medium heat.
  2. Heat 1 tbsp of olive oil.
  3. Meanwhile, take your chicken breasts and cut them into small strips.
  4. Place chicken breast into the pan and flip occasionally.  
  5. Take 2-3 tbsp of green pesto and mix with cream fraiche in a bowl. 
  6. Once chicken is browned, add the mixture of creme fraiche and pesto to the pan.
  7. Give it a good mix to ensure all chicken is covered in the mixture. 
  8. Once chicken is cooked through, turn down heat and allow chicken to cook through.
  9. Once the chicken is cooked through, add a big handful of spinach (or more to taste) and allow to wilt. 
  10. Chop cherry tomatoes in half and pull apart the mozzarella into small pieces.
  11. Add cherry tomatoes and a pinch of black pepper to the pan.
  12. Created a bed of spinach on your serving plate. 
  13. Add the chicken and tomatoes on top of our spinach. 
  14. Add fresh mozzarella. 
  15. Finish with a drizzle of balsamic vinegar.
