5 minute bright and beautiful broccoli salad

Last year, I was introduced something called broccoli salad my my other half's family and have craved it continuously ever since. It was only until this week that I made it for myself, and can't believe how quick it is to make.

This bright, colourful and speedy recipe is great at a summer barbeque, or to serve up as a side at a buffet or with your favourite hot or cold meat. Its various flavours and textures create a perfectly balanced sweet and nutty taste, and will soon become your go-to quick-fix snack.

So here is the recipe for this super easy, tasty salad.

What you'll need
  • 2 large broccoli florets
  • 1 red onion 
  • 2 tbsp light mayonnaise 
  • 1/2 grated cheddar cheese
  • 100 grams of cooked bacon 
  • Pine nuts (optional) 
  • 1 tspn white wine vinegard 
  • 1/2 tspn sugar (white or brown) 
  1. Start by finely chopping the broccoli floret heads into 1/2 inch pieces. (You do not need the stalk.) 
  2. Add to a serving bowl or dish.
  3. Add the 2 tablespoons of mayonnaise and mix well in to the broccoli. 
  4. Finely chop the red onion and add to the bowl. 
  5. Finely chop the cooked bacon into small piece and also add to the bowl.
  6. Add in one tablespoon of white wine vinegar and the sugar. 
  7. Add the pine nuts (optional). 
  8. Lastly, add desired amount of cheese to taste and stir well.
